1 lb. ground sausage
1 (8-oz.) block colby-Jack or sharp Cheddar cheese, grated
2 cups self-rising flour
2 eggs, lightly beaten
1 1/2 cups buttermilk
Vegetable cooking spray
1. Cook sausage in a large skillet until brown and crumbly. Drain sausage; rinse with hot water. Combine sausage, grated cheese, and flour in a bowl. Stir in eggs; stir in buttermilk until texture is similar to muffin batter. Scoop batter into muffin cups coated with cooking spray.
2. Bake at 350° for 25 to 30 minutes or until golden.
