Lemon Chicken Pasta

1 lb. chicken breasts, baked and chopped
1 lb. cooked penne
5 oz. baby spinach
1 pint grape tomatoes
2 cups whipping cream
Zest and juice from 2 lemons
Freshly grated Parmesan cheese (optional)

1. Combine chicken, penne, and next 2 ingredients in a baking dish. Stir together cream, lemon zest, and lemon juice. Season with salt and pepper to taste, and sprinkle with freshly grated Parmesan cheese, if desired.
2. Bake, covered, at 350° for 30 minutes.
