Makes 24 muffins
1 cup butter, softened
1 cup granulated sugar
1 cup brown sugar
4 eggs
2 tsp. vanilla extract
1 cup applesauce
1 cup (8 oz.) sour cream or Greek yogurt
3 cups all-purpose flour
1/4 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
1 apple, cored and cut into chunks
1 cup chopped pecans
1. Beat butter and sugars with an electric mixer until creamy. Beat in eggs, 1 at a time, until blended after each addition. Beat in vanilla, applesauce, and sour cream.
2. Combine flour and next 3 ingredients; gradually add to butter mixture, beating until blended. Stir in apples and pecans. Scoop batter into lightly greased muffin cups.
3. Bake at 350° for 30 minutes.
