Granola Bars are included in our rotating menu that we serve at Linn Park on Thursdays.
2 cups old-fashioned oatmeal
1 cup sliced almonds
1/2 cup sunflower kernels
1/2 cup toasted wheat germ
3 Tbsp. butter
2/3 cup honey
1/4 cup light brown sugar
1 1/2 tsp. vanilla extract
1/2 cup chopped dried apricots
1/2 cup dried cranberries
- Preheat oven to 350°. Line a half sheet pan or baking sheet with parchment paper; spray paper with cooking spray.
- Toss oatmeal and next 3 ingredients together to combine; spread on parchment paper, and bake for 10 minutes. Remove from oven, and transfer oat mixture to mixing bowl. Spray parchment paper with more cooking spray. Reduce oven temperature to 300°.
- Place butter and next 3 ingredients in a small saucepan over medium heat, and bring to a boil, stirring occasionally. Pour honey mixture over oat mixture. Add in apricots and cranberries; stir to combine.
- Spread out mixture on prepared pan to create a rectangle (it will only cover about half of a half sheet pan). Bake for 20 minutes. Allow mixture to cool for 1 1/2 to 2 hours. Cut into squares. Yield: 16 bars.
